Elderflower syrup from childhood

Elderflower syrup taste is the taste of my childhood. I grew up in a rural area of Croatia, surrounded with trees and farms. One of the things we used to do as a children is collecting elderflower blossoms. My mum used to make this delicious sweet syrup every May.

We were using elderflower syrup mostly as addition to the tap water or sparkling water to make some sort of elderflower refreshing drink or aromatic water and lemonade. This was my favorite drink when I was a child, that's why I was surprised when I realized that people in other parts of the world don't know about this deliciousness.

Sugar free elderflower cordial

Because I don't use sugar anymore, as I am following keto lifestyle, and elderflower syrup or elderflower cordial is usually made with white sugar, I made an experiment with erythritol and stevia to make sugar free syrup. Among my family members and friends I have some true and experienced elderflower juice drinkers. They have tried this syrup and approved! This elderflower syrup is great as a keto pancake syrup and perfect as a refreshing drink. 🍹

I was putting this syrup in the elderflower cakes and it was delicious. Usually I make larger amount and preserve it in the bottles and jars in the pantry or in the fridge. However, you can even put this syrup in the ice bags or in the ice molds and make syrup ice cubes that you can put into the tap water, lemonade or into your mineral sparkling water and have a delicious refreshing drink. Drink that you prepare on that way will have a great flavor and it will be 0 carbs drink and 0 calories drink!

Elderflower syrup ingredients

Elderflower 15 flowers

Water 6 cups (1.5 L)

Erythritol 2.5 cups (300g/10.5 oz)

Liquid stevia 2 TBS (30 ml)

Citric acid 2.5 TBS

Slices of 1 organic lemon

Slices of ginger (optional)

How to make sugar-free elderflower syrup?

Prepare elderflower blossoms and leave them for few hours outside at the garden table, on your balcony or on the kitchen counter to give a chance to bugs and insects to escape. Don't wash it or shake excessively to get rid of insects because you will lose the precious pollen from the blossoms, as well as the flavor.Take only fully bloomed flowers, don't use the stems.

Sugar free elderflower syrup recipe (2)Combine low carb sweetener, water and citric acid in a saucepan over a medium heat, stirring until sweetener and citric acid are completely dissolved. Remove from the heat and leave it to completely cool to room temperature.

When syrup completely cooled, combine it in a bowl or in a jar with elderflower blossoms, lemon slices and ginger and leave it in the fridge for 48 hours. Every day stir the syrup.

After 48 hours strain the syrup into a clean jar or a glass bottle. Store the syrup in a cool place or in the fridge for few months. After opening the bottle, store it in the fridge.

You can use this syrup for pancakes, in cakes, or put it in the water and make a flavor water or sugar free elderflower juice.

To make elderflower juice put 2 TBS of elderflower syrup to 1 cup of tap or sparkling water.
