This tasty meal for a Stove Top stuffing chicken casserole recipe, is also easily made with leftover turkey.

Like I mentioned in previous posts, I love leftover Thanksgiving turkey and somehow always have a box or bag of unused stuffing in my pantry.

This easy dinner recipe works great with any dry stuffing mix, which becomes the topping of this easy recipe.

Choose your favorite flavor or variety and you will end up with a turkey/ chicken stuffing casserole that the whole family will enjoy.

I don’t know about you but by the 3rd or 4th day after Thanksgiving it’s time to say good bye to leftovers, and this easy casserole is one way to do it.

With just a few simple ingredients like cream of chicken soup or cream of mushroom soup, this chicken stuffing bake recipe becomes a family favorite.

It will become yours too, as it’s easily adapted to what’s in the fridge.

I decided to give this easy chicken casserole recipe a Southwest slant, but you may choose to keep it the ultimate comfort food and not make it spicy at all.

There are many recipes out there for this casserole and some use raw chicken breasts.

I love this version because it easily uses my leftovers such as rotisserie chicken or turkey and any cooked veggies such as green beans or mushrooms can also be worked in.

On busy weeknights this casserole is easily put together, but it can also be made the day before and baked as needed.

For that matter it can even be frozen for up to 3 months. Just thaw and bake as needed.

This great recipe is so adaptable and that’s one reason I love it!

Just a Few Easy Steps Needed to Make this Stove Top Stuffing Chicken Casserole Recipe

Begin with a casserole dish that is about 13 x 9.

Don’t forget to spray cooking spray on the baking dish so it doesn’t stick.

My dish was a bit smaller so I used a little less!

Tear the chicken or turkey into bite-sized pieces and place on the bottom of the dish.

Sprinkle some crumbled crisp bacon on top of the chicken.

But if you don’t like bacon it’s OK to leave it off.

Add some shredded cheddar or Swiss cheese in a nice even layer.

At this point I added a layer of green chilies and a layer of corn.

You may want green beans or mushrooms. Or you may not want to add veggies at all.

The next step is where it gets interesting.

I mixed together a can of soup, some sour cream and some green chile dip seasoning, along with some chopped pimentos to give the mixture some color.

This soup mixture makes a very creamy sauce.

If you’d like you can add an additional can of soup, but this busy day recipe seemed plenty creamy to me.

Spread the condensed soup mixture on top of your last layer.

Now take the dry stuffing mix and top the casserole with it.

Whisk the melted butter and chicken broth together and pour over the flavorful stuffing.

Bake in a preheated oven, uncovered, for 30 minutes, but cooking time can vary if you want a golden brown topping.

If you like your casserole recipes crispier on the top, then bake longer.

Cooking time will also vary if your casserole is not at room temperature.

Some of you may want to use Ranch dressing mix, but I think this would taste great with Italian seasoning, too.

I had fun using the green chili seasoning, but as you can see there are many alternatives from this company.

I think the dill or the chive and onion would be great!

Think about what flavor the Stove Top stuffing mix is and try to find seasonings to match.

On busy nights this Stove Top stuffing chicken casserole recipe makes a perfect meal, especially after a filling Thanksgiving holiday!

This easy meal is a great way to use leftovers and can be put together in about 15-20 minutes.

Add a salad for a complete meal and serve leftover cranberry sauce on the side.

I know the idea is getting rid of leftovers when making this recipe BUT if you have leftovers, they can be stored in an airtight container for 3-4 days.

Description

This easy chicken or turkey casserole is great made with leftovers. Top it with that extra box of stuffing and you have got a great family pleaser!

Ingredients

4 to 5 cups chopped cooked turkey or chicken

4 slices crisp bacon, crumbled

1 cup shredded cheddar cheese

1 c sour cream

1 can unsalted cream of chicken soup

1 4 oz can of drained green chilies, patted dry

1 can drained corn, patted dry

2 oz drained and patted dry chopped pimentos

1 oz dry seasoning mix, such as green chili or Ranch dressing

1 6 oz box cornbread Stove Top stuffing (uncooked)

1 c chicken broth

4 T melted butter

Instructions

Preheat oven to 350. Lightly spray a 9 x 13″ pan with cooking spray.

Spread chicken or turkey on the bottom of the oiled dish. Top with crumbled bacon and shredded cheese.

Spread the corn, and green chilies on top.

In a separate bowl, mix together the cream of chicken soup, dry ranch or green chile seasoning, sour cream and dried pimentos.

Spoon on top of corn and green chilies and use an offset spatula to spread evenly.

Sprinkle the uncooked stuffing over the soup mixture. Pour on chicken broth mixed with melted butter, evenly over the stuffing.

Bake uncovered for 30 to 45 minutes.

Notes

Use chicken or turkey interchangeably. Rotisserie chicken is fine.

If you want a creamier casserole, add another can of soup.

You can also use any flavor of stuffing mix.

This can be made ahead, stored in the fridge, and baked when needed.

Freeze unbaked for up to 3 months. Wrap well. Thaw and bake as in directions.
