Ingredients

Chaffles

  • 4 4 eggeggs
  • 2 cups (8 oz.) 475 ml (230 g) shredded cheddar cheese
  • 2 tbsp 2 tbsp fresh chives, chopped (save some for garnish)

Topping

  • ½ cup (4 oz.) 120 ml (120 g) cream cheese, softened
  • ½ tsp ½ tsp garlic clove, mincedgarlic cloves, minced
  • 1 (½ oz.) 1 (15 g) scallion, chopped finelyscallions, chopped finely
  • 3 oz. 85 g bacon, chopped and cooked
  • 2 2 fresh jalapeño, seeded and slicedfresh jalapeños, seeded and sliced
  • ½ (¼ oz.) ½ (7.5 g) scallion, chopped for garnishscallions, chopped for garnish

Making low carb simple

Instructions

  1. Pre-heat your waffle maker.

  2. Place all of your ingredients into a mixing bowl and beat to combine.

  3. Lightly grease your waffle iron and then evenly spoon the mixture over the bottom plate, spreading it out slightly to get an even result.

  4. Close the waffle iron and cook for approx 6 minutes, depending on your waffle maker.

  5. Gently lift the lid when you think they’re done.

  6. While the waffles cook, place the cream cheese, garlic and spring onions into a bowl and beat well to combine.

  7. Add most of the bacon, retaining some for garnish and stir through.

  8. When waffles are ready, top with a big spoonful of cream cheese, sliced jalapeño to taste and the remaining chopped chives and bacon.

    I found no need to grease my waffle maker. The cheese has more than enough oil to prevent sticking.

    I made this for dinner tonight it was very tasty we also had a fried egg & some Halloumi with it as I only have two meals a day. It was very filling and very tasty, loved it,
    I use Martinas Keto diet app already I love her recipes, this will definitely be one of my go to snacks in future.

    The text has been fixed, these are 5g net carbs per serving.

    The batter made 5 1/2 chaffles and the batter still oozed all over the place! I probably wuld have ended up with 6 chaffles without the over run. I didn't like the flavor of the chaffles but the topping was good. Next time I will use another chaffle recipe I like more but keep the topping the same. Except... I reduced the jalapeno peppers to 1.5 instead of 2 and it was a good decision.

    Made this today didn't have jalapeño so added 2oz fresh tomatoes 1oz avocado and a fried egg…. new macros according to Carb Manager app for 1 serving: protein 35g, fat 46g, total carbs: 8g. I only have 2 meals a day and this was the first for today… very satisfying and filling! Thank you.

    I find that a lot of recipes don't tell you to season your food when cooking. So don't forget to add seasoning. A little salt and pepper in the Chaffle before you put them in the waffle maker makes a difference.
