This N’ice cream pie recipe uses only afew natural ingredients that when combined, create something utterly delicious and healthy!

“Nice cream” is becoming quite the rage these days. With the rise of plant-based diets, people are turning more and more to the wonderful world of fruits for their dessert course. But that doesn’t mean dessert has to be boring. I mean, don’t get me wrong. I love a plate of plain fruit as much as the next person. But sometimes, it’s nice to take things a little further. And this ice cream pie recipe does just that!

WHAT IS N’ICE CREAM?

“N’ice cream” is a play on the words “ice cream.” It means ice cream made without dairy and generally of fruit such as bananas. Pretty much any “ice cream” made without animal products is called “nice cream” to infer that no animals were harmed or used by the use of animal products.

BANANA N’ICE CREAM RECIPE

While there is certainly dairy-based banana ice cream out there, when most people say banana ice cream, they are referring to a “nice cream” made solely with bananas. No dairy included. This banana ice cream recipe can be enjoyed without turning it into a pie. Simply omit the crust and pecan topping.

CAN YOU BLEND BANANAS AND THEN FREEZE THEM?

While I haven’t tried this method, I will have to say no. I’m pretty sure you would end up with a non-blendable mess. You’ll want to slice the bananas, freeze them and then blend them. Doing it in this order allows you to have small, blendable pieces that are still soft enough for your food processor to handle.

HOW LONG CAN YOU KEEP N’ICE CREAM PIE IN THE FREEZER?

In general, the longer you keep banana ice cream in the freezer, the more flavor and texture you will lose. This type of recipe is not meant for long-term freezer storage. In fact, it’s best to eat right after making it. But if you must freeze it for a bit, I recommend no longer than about 2-3 weeks, and even that could be pushing it a bit. It’s better to make smaller batches you can eat quicker than larger batches that need storage.

ARE FROZEN BANANAS HEALTHY?

Frozen bananas have the same nutritional value as fresh bananas. So yes! They are healthy! And they are decidedly healthier than regular ice cream. They have way more nutrients and far greater nutritional value. So enjoy without feeling guilty!

ARE BANANAS FATTENING?

Bananas are part of a perfectly healthy eating plan. Providing you don’t have any allergies to them, there is no reason to consider bananas fattening. And as far as this recipe goes, all the fats in this recipe are healthy fats from the pecans, and all the sugars are healthy sugars from the bananas! If ever there was a healthy, real-food dessert, this is it, folks. Eat up!

NOTE: This recipe uses a Yonana’s Machine. However, a food processor or high-powered blender could also work if you add a little milk (any type) to help blend it.

Equipment

  • Yonana's Machine OR

  • Food processor

Ingredients

Crust:

  • 8 oz. pecan pieces
  • 8 medium medjool dates (pits removed)
  • 2 tsp. pure vanilla extract

Filling:

  • 5 cups frozen bananas (sliced for measuring – best if they are yellow, not brown when frozen)
  • 2 tsp. pure vanilla extract
  • 2 tbsp. maple syrup or honey to taste (optional)

Instructions

Crust:

  • In a food processor, process the crust ingredients. They are processed enough when they begin to clump together inside the processor.

  • Press the crust into a standard-sized pie tin with your fingers and store the crust in the freezer while you make the filling.

Filling:

  • Put your slightly thawed bananas through the Yonana's machine into a medium bowl.

  • Using a fork, beat in the vanilla extract.

Pie:

  • Fill your pie crust and smooth out the top by using a spatula.

  • Freeze for at least 2 hours.

  • Cut and serve.
