"Recently enjoyed my first meal at a local South African restaurant here in Brooklyn. There we enjoyed this fabulous side dish - a spicy revamped rendition of baked beans. Of course, this sent me in search of a recipe to prepare at home. Found this one on the Internet and plan to try it soon. The original called for three times the amount of oil but I plan to make it as presented."

  • 50 ml canola oil
  • 30 g chopped fresh ginger
  • 30 g chopped fresh garlic
  • 20 g chopped chili peppers
  • 200 g chopped onions
  • 500 g tomatoes, roughly chopped
  • 100 g green peppers, roughly chopped
  • 100 g red peppers, roughly chopped
  • 50 g leaves masala
  • 200 g grated carrots
  • 450 g vegetarian baked beans, in tomato sauce
  • 10 g fresh coriander

directions

  • Fry ginger, garlic, chillis, onions in the oil.
  • Add the leaf masala or curry powder of your choice.
  • Add the tomatoes and cook for 10 minutes.
  • Add peppers and carrots and cook for 10 minutes. Add baked beans and cook for 5 minutes.
  • Remove from heat and add coriander. Check seasoning. Serve with whatever you want, hot or cold.

  1. This is a FABULOUS recipe Toni - my mum in particular LOVED this, she is a vegetarian and has copied this recipe! I will not pretend that it does take some time to prepare all the vegetables, but the result was amazing - and mum and I had a bottle of wine to keep us company! We lived in Africa for many years and were thrilled to stumble across this VERY authentic African bean recipe - thanks so much! I used olive oil instead of rape/canola oil - everything else was as posted. Made for ZWT4 - photos to follow, still on my camera! Thanks Toni-kins! FT:-)

  2. Did tone this down a bit by using the mildest chili pepper I could find, but other than that, all the ingredients were used as listed! Served it with a South American chicken dish I'd prepared & it was a success! Really enjoyed this flavorful bean dish! [Made & reviewed while on tour in Africa with the Zaar World Tour 4]

  3. 123 Hit Wonders 2007 ~ We really enjoyed this! Used garam masala in place of masala leaves, used a green pepper only and a red onion. I also fried the peppers with the onions so that they would be cooked properly. The small amount of peppers adds a nice little zing! A very colourful dish with wonderful flavors. Served with Recipe #61414 and Recipe #61962. Thanks toni!

  4. This was the perfect dish for my post-Xmas beans and veg stint.. I made no changes except that I chose the curry powder option for 50g leaves masala. This I enjoyed as a dinner, hot, in a deep bowl, with a splodge of thick greek yoghurt on top. Unreal! ( Made for Zaar Tag ) P.S. how quick is this to whip up too?! : )

My great-grandparents owned a coffee shop; my Nana was also a great cook and started the tradition of baking around the holidays, both cookies and fruitcakes. After she died, now a decade ago, our family decided to continue in her honor. The picture above is my mother's (Chef Hot Pans) dining room table just before we packed up our Christmas cookie trays. More that 20 kinds of cookies, many of which are from 'Zaar recipes. <br /> <br />I myself am an amateur cook with a penchant for ethnic foods and spice. Currently reforming my menu in favor of healthy dishes lower in fat with lots of grains and vegetables.
