Scones are little nuggets of golden brown goodness known for accompanying your afternoon tea. Scones usually get a bad reputation because they are dry and tasteless. So to turn that around, I’m featuring full flavor flaky tender scones that you can’t wait to make for your next brunch or afternoon tea.

Scones are not known for being the prettiest pastry, but that’s okay because it’s all about the taste. You can choose different flavor combinations like Dark Chocolate Cherry, Gruyere & Prosciutto, and Maple Bacon.

Here are some basic tips before baking scones to guarantee you get perfect scones every time.

  • First, make sure the butter is really cold. Simply place the butter into the freezer for a 5-10 minutes before using in the dough. Cold butter = flaky layers.
  • Next, chill the dough before baking this helps prevents the scones from spreading and keeps the layers flaky.
  • Do you best not to overmix the scone dough, we want flaky, tender scones not dense. To avoid overmixing, mix the dough by hand and mix just enough so the dough comes together.
  • Finally, to get the golden brown crust to add an egg wash on top. Just mix a whole egg and a little bit of milk or water and mix together. Then brush on top of the scones before baking.
